Potom som ho robila doma a zhodou n\u00e1hod aj verziu &#8222;to go&#8220; pre Domi a ukon\u010dila som to \u00faspe\u0161ne sushi ve\u010derom pre kamo\u0161ov, kedy som moje sushi skills vyu\u017eila v plnej sile. V\u00fdsledok je teda tak\u00fd, \u017ee nov\u00e1 choroba je na svete, ja chv\u00ed\u013eku sushi asi vidie\u0165 nechcem, ale po tom v\u0161etko to neda\u0165 na blog by bol hriech, tak\u017ee po\u010fme na to &#8211; ako si pripravi\u0165 doma sushi ako z re\u0161taur\u00e1cie. <\/p>\n\n\n\n<p>Nako\u013eko je ale sushi mierne zlo\u017eitej\u0161ia z\u00e1le\u017eitos\u0165, bude post tro\u0161ku dlh\u0161\u00ed a okrem foto prilo\u017e\u00edm aj vide\u00e1 (***prid\u00e1m \u010dochv\u00ed\u013ea). Rozdel\u00edm ho hlavne na tri recepty &#8211; hosomaki\/maki (mal\u00e9 sushi\/jedno\/max dvojzlo\u017ekov\u00e9 sushi), futomaki (viaczlo\u017ekov\u00e9 sushi) a uramaki (sushi s ry\u017eou vonku). Na spr\u00e1vnu pr\u00edpravu sushi ry\u017ee je potrebn\u00fd ry\u017eovar. Aziati ry\u017eovar vyu\u017e\u00edvaj\u00fa na ry\u017eu permanentne. V <a href=\"https:\/\/foodonedge.com\/category\/cestovanie\/usa-a-kanada\/kanada\/\">Kanade<\/a> to bol napr. z\u00e1klad takmer ka\u017edej dom\u00e1cnosti. Mne bolo u\u017e d\u00e1vno povedan\u00e9, \u017ee dobr\u00fa sushi ry\u017eu priprav\u00edte len pomocou ry\u017eovaru, tak som ho zak\u00fapila. Bolo to sto rokov dozadu (alebo min. 10) a ja ho pou\u017e\u00edvam dodnes. Nepou\u017e\u00edvam ho na dennej b\u00e1ze, ale rob\u00edm v \u0148om ry\u017eu aj be\u017en\u00fa (basmati, jazm\u00ednov\u00fa a pod.) a ry\u017eovar st\u00e1le dr\u017e\u00ed. Vy\u0161iel vtedy asi 30 \u20ac, tak\u017ee mysl\u00edm, \u017ee k\u00fapa sa jednozna\u010dne oplatila. Ak ry\u017eovar nem\u00e1te a odmietate si ho k\u00fapi\u0165, tak sk\u00faste spravi\u0165 ry\u017eu v norm\u00e1lnom hrnci, mo\u017eno to vyjde. Tak \u010di tak sa pri pr\u00edprave ry\u017ee ria\u010fte pokynmi z obalu (pomer vody\/ry\u017ee).<\/li>\n\n\n\n<li>Druh\u00e1 vec je e\u0161te d\u00f4le\u017eitej\u0161ia ako ry\u017eovar. Druh ry\u017ee mus\u00ed by\u0165 vyslovene prisp\u00f4soben\u00fd na pr\u00edpravu ry\u017ee. Na Slovensku to je jednoduch\u00e9, ry\u017ea nem\u00e1 \u017eiadne m\u00e4t\u00face pr\u00edvlastky, ve\u013emi jednoducho je na ry\u017ei vhodnej na sushi n\u00e1pis &#8222;sushi ry\u017ea&#8220;. V pr\u00edpade, \u017ee pou\u017eijete in\u00fa ry\u017eu, nebude sa v\u00e1m lepi\u0165, a t\u00fdm p\u00e1dom sa ani nemus\u00edte sna\u017ei\u0165 o dom\u00e1ce sushi. Na\u0161\u0165astie, sushi ry\u017eu jednoducho zo\u017eeniete u\u017e aj v ka\u017edom v\u00e4\u010d\u0161om supermarkete v oddelen\u00ed exotick\u00fdch potrav\u00edn pri s\u00f3jov\u00fdch om\u00e1\u010dkach (Tesco, Billa a spol.). <\/li>\n<\/ol>\n\n\n\n<p>Ke\u010f u\u017e m\u00e1te aj ry\u017eu, aj ry\u017eovar, postup \u0165a\u017ek\u00fd nie je.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" style=\"font-size:23px;text-decoration:underline;text-transform:uppercase\">POSTUP na pr\u00edpravu sushi ry\u017ee:<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Ry\u017eu si odv\u00e1\u017ete e\u0161te v surovom, nemokrom stave.<\/li>\n\n\n\n<li>Potom je d\u00f4le\u017eit\u00e9 ry\u017eu premy\u0165 pod te\u010d\u00facou vodou &#8211; aj zo 5x. A\u017e k\u00fdm nebude voda z nej vytekaj\u00faca \u010d\u00edra. <\/li>\n\n\n\n<li>N\u00e1sledne ju m\u00f4\u017eete da\u0165 do ry\u017eovaru, zalejte pomerom vody pod\u013ea pokynov na obale ry\u017ee (nako\u013eko druhy sushi ry\u017ee sa m\u00f4\u017eu l\u00ed\u0161i\u0165 a neviem, ak\u00fa k\u00fapite vy) a dajte ju vari\u0165.<\/li>\n\n\n\n<li>Ry\u017eovar potom s\u00e1m ry\u017eu priprav\u00ed a ke\u010f je hotov\u00e1, s\u00e1m sa aj vypne. <\/li>\n\n\n\n<li>Medzit\u00fdm, k\u00fdm ry\u017eovar mak\u00e1, vy si pripravte ocot, ktor\u00fd dod\u00e1 ry\u017ei jej typick\u00fa chu\u0165.<\/li>\n\n\n\n<li>80 ml ry\u017eov\u00e9ho octu v malom hrnci zmie\u0161ajte s 3 PL bieleho cukru (nekopcovit\u00e9) (1) a 1,5 \u010cL soli (kopcovitej\u0161ie) (2). <\/li>\n\n\n\n<li>Dajte na spor\u00e1k a nechajte na strednom ohni takmer zovrie\u0165. K\u00fdm sa nebud\u00fa tvori\u0165 u\u017e mal\u00e9 bublinky na povrchu (3).<\/li>\n\n\n\n<li>Vtedy m\u00f4\u017eete vypn\u00fa\u0165 a odstavi\u0165 hrniec a da\u0165 bokom.<\/li>\n\n\n\n<li>Ke\u010f je u\u017e aj ry\u017ea hotov\u00e1, dajte si ju do nejakej misky &#8211; najlep\u0161ie drevenej alebo bambusovej, ale ak nem\u00e1te, ni\u010d sa nestane, aj ke\u010f bude v nerezovej alebo inej (4). <\/li>\n\n\n\n<li>N\u00e1sledne cez vare\u0161ku na povrch prelejte pripraven\u00fd ochuten\u00fd ocot a potom jemne zamie\u0161ajte, aby sa dostal aj do spodn\u00fdch \u010dast\u00ed ry\u017ee. Tak isto ako sushi ry\u017eu ho u\u017e dnes jednoducho zo\u017eeniete v ka\u017edom v\u00e4\u010d\u0161om supermarkete.<\/p>\n\n\n\n<p>Ry\u017eu si m\u00f4\u017eete spravi\u0165 dopredu, ale max. tak hodinku, dve. Ur\u010dite nie de\u0148 dopredu.<\/p>\n\n\n\n<p>Ned\u00e1vajte ju do chladni\u010dky ani do mikrovlnky. Na to, aby bola sushi ry\u017ea dobr\u00e1, mus\u00ed by\u0165 \u010derstv\u00e1, \u017eiadne zohrievanie ani chladenie prebieha\u0165 nem\u00e1. <\/p>\n\n\n\n<p>Pri rolovan\u00ed sushi sa v\u00e1m ry\u017ea bude extr\u00e9mne lepi\u0165 na prsty, to je norm\u00e1lne a tak to m\u00e1 by\u0165. Ja si v\u017edy priprav\u00edm nejak\u00fa men\u0161iu misku s vodou na dres, kde sushi pripravujem a predt\u00fdm ako si idem ry\u017eu nabra\u0165, si jemne ruky navlh\u010d\u00edm (z\u00e1rove\u0148 si ich tam aj um\u00fdvam po nanesen\u00ed ry\u017ee na riasu). Nechcete v\u0161ak, aby ste ruky mali mokr\u00e9 a kvapkalo v\u00e1m z nich, lebo t\u00fdm p\u00e1dom namo\u010d\u00edte aj ry\u017eu a poka\u0161lete si nori riasu. <\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\" style=\"font-size:23px;text-transform:uppercase\">\u010co okrem ry\u017ee a ryby potrebujem na sushi?<\/h3>\n\n\n\n<p>Ke\u010f u\u017e m\u00e1te ry\u017eu hotov\u00fa alebo k\u00fdm sa pripravuje, m\u00f4\u017eete vyu\u017ei\u0165 \u010das na organiz\u00e1ciu \u010fal\u0161\u00edch ingredienci\u00ed alebo n\u00e1strojov.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-medium-font-size\" style=\"text-transform:uppercase\">Sushi z\u00e1klad<\/h4>\n\n\n\n<p>K sushi samozrejme neodmyslite\u013ene patr\u00ed nori riasy. Bez nich sa moc nepohnete, jedine, \u017ee by ste chceli robi\u0165 len nigiri a sashimi. Rovnako ako predt\u00fdm, zo\u017eeniete ich v ka\u017edom v\u00e4\u010d\u0161om supermarkete. V \u0148om zo\u017eeniete aj z\u00e1zvor, s\u00f3jov\u00fa om\u00e1\u010dku a wasabi. \u010casto tam zo\u017eeniete aj dreven\u00e9 pali\u010dky, ak by ste chceli \u00eds\u0165 all in.<\/p>\n\n\n\n<p>Okrem nori rias budete potrebova\u0165 aj bambusov\u00fa podlo\u017eku. Sushi si viete spravi\u0165 aj \u010disto zeleninov\u00e9, pr\u00edpadne s tofu, krevetami alebo krab\u00edmi ty\u010dinkami. Modern\u00e9 sushi u\u017e dokonca \u010dasto zah\u0155\u0148a aj veci ako foie gras, hov\u00e4dzie m\u00e4so a pod. <\/p>\n\n\n\n<p>Zeleninovo sa naj\u010dastej\u0161ie pou\u017e\u00edva uhorka a avok\u00e1do. Ja vyu\u017e\u00edvam aj mrkvu, zmes bylinkov\u00fdch v\u00fdhonkov a mango. Ke\u010f rob\u00edm sushi s konzervov\u00fdm tuniakom, to kombinujem aj s n\u00e1tierkov\u00fdm syrom (Philadelphia, Lu\u010dina a pod.). Pokojne ale m\u00f4\u017eete vyu\u017ei\u0165 aj menej tradi\u010dn\u00e9 n\u00e1plne &#8211; rukolu, \u0161parglu, \u00faden\u00e9ho lososa, papriku, nakladan\u00fa kapustu. V Kanade v\u0161ade cpali pe\u010den\u00e9 alebo vypr\u00e1\u017ean\u00e9 bat\u00e1ty do sushi. Moje najob\u013e\u00fabenej\u0161ie s\u00fa v\u0161ak st\u00e1lice vo forme surov\u00e9ho tuniaka a avok\u00e1da. Pr\u00edpadne kreveta v tempure. Celkovo m\u00e1m rada tempuru, len s t\u00fdm sa mi nechce ka\u0161\u013ea\u0165, lebo ak sa do v\u00fdroby vlastn\u00e9ho sushi pust\u00edte, uvid\u00edte, \u017ee to zaberie dos\u0165 \u010dasu aj bez vym\u00fd\u0161\u013eania. <\/p>\n\n\n\n<p>Pod\u013ea v\u00fdberu zeleniny\/r\u00fdb a pod. si v\u0161ak viete pripravi\u0165 svoju pracovn\u00fa dosku. Rad\u00edm v\u0161etko si nakr\u00e1ja\u0165 predt\u00fdm ako za\u010dnete sushi robi\u0165. Lososa\/tuniaka na dlh\u0161ie a hrub\u0161ie sl\u00ed\u017ee, tak isto avok\u00e1do a uhorku. Mrkvu d\u00e1vam na ten\u0161ie sl\u00ed\u017eiky, nako\u013eko t\u00e1 dos\u0165 chrumk\u00e1. Ak chcem sushi obalova\u0165 &#8211; v sezame\/v pa\u017e\u00edtke\/ vo fritovanej cibu\u013eke, priprav\u00edm si aj plytk\u00fd ve\u013ek\u00fd tanier, kde si oba\u013eovac\u00ed materi\u00e1l roztr\u00fasim. Rovnako si priprav\u00edm misku na um\u00fdvanie r\u00fak, ktor\u00fa vy\u0161\u0161ie spom\u00ednam. Otvor\u00edm si Lu\u010dinu alebo konzervu tuniaka, ak ich pl\u00e1nujem pou\u017ei\u0165. V\u0161etko proste pripravte tak, aby bolo po ruke a u\u017e nezost\u00e1va in\u00e9, len sa pusti\u0165 do rolovania.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default Hosomaki je doslova &#8222;tenk\u00e9 sushi&#8220;. U n\u00e1s sa naz\u00fdva sk\u00f4r jednoducho maki. Typick\u00e9 je t\u00fdm, \u017ee zvy\u010dajne obsahuje jednu, max. dve ingrediencie. V pr\u00edpade maki je nori riasa vonku, ry\u017ea vn\u00fatri a vn\u00fatri je okrem ry\u017ee u\u017e len jeden (max. 2) druhy ingrediencie (losos, tuniak, avok\u00e1do alebo i.). Maki by sa zo z\u00e1sady malo kr\u00e1ja\u0165 na 6 ks a z jednej nori riasy viete pripravi\u0165 dva druhy maki. Lesklou stranou polo\u017ete riasu na bambusov\u00fa podlo\u017eku a na drap\u013eav\u00fa stranu budete d\u00e1va\u0165 ry\u017eu.<\/li>\n\n\n\n<li>Potom si u\u017e len ve\u013emi jemne navlh\u010dite ruky, zoberte si v\u00e4\u010d\u0161iu gu\u013eu ry\u017ee a porozkladajte ju postupne na nori riasu tak, aby v\u00e1m na vrchu zostalo asi 0,5 &#8211; 1 cm riasy bez ry\u017ee (1). <\/li>\n\n\n\n<li>Ak pou\u017e\u00edvate surov\u00fa rybu, potrite k\u00fasok ry\u017ee, kde budete poklada\u0165 povedzme tuniaka trochu wasabi (ak rob\u00edte zeleninov\u00e9 maki alebo nesurov\u00e9, wasabi v tomto bode potrebn\u00e9 nie je).<\/li>\n\n\n\n<li>Tuniaka potom pokladajte na ry\u017eu. Dajte ju asi 1,5 &#8211; 2 cm od spodku ry\u017ee (2).<\/li>\n\n\n\n<li>Ke\u010f je tuniak po celej d\u013a\u017eke, zost\u00e1va u\u017e len rolku zabali\u0165.<\/li>\n\n\n\n<li>Za\u010dnite t\u00fdm, \u017ee naberiete palcami spodok bambusovej podlo\u017eky a ostatn\u00fdmi prstami si prid\u0155\u017eajte n\u00e1pl\u0148 rolky. Postupne pomocou palcov zarolov\u00e1vajte rolku, a\u017e k\u00fdm nepr\u00eddete takmer ku koncu, kde m\u00e1te k\u00fasok rolky bez ry\u017ee. <\/li>\n\n\n\n<li>Jednou rukou rolku dr\u017ete, druh\u00fa si namo\u010dte do vody jeden prst, prejdite n\u00edm po celej riase, kde nem\u00e1te ry\u017eu a ke\u010f je to hotov\u00e9, tak rolku dorolujte. Pou\u017e\u00edvate teda aj tuniaka, aj avok\u00e1do, aj povedzme mango v jednej rolke. Z tohto d\u00f4vodu aj nori riasa nejde na polovicu, ale skracujete ju len o jednu tretinu &#8211; lebo v\u00e4\u010d\u0161ia n\u00e1pl\u0148. Logicky. \u010co je druh\u00e1 zmena, \u017ee na konci d\u0148a sa futomaki nekr\u00e1ja na 6 ks, ale na 8 ks. Lesklou stranou polo\u017ete riasu na bambusov\u00fa podlo\u017eku a na drap\u013eav\u00fa stranu budete d\u00e1va\u0165 ry\u017eu &#8211; to plat\u00ed aj v tomto pr\u00edpade.<\/li>\n\n\n\n<li>Potom si u\u017e len navlh\u010dite ruky jemne, zoberte si v\u00e4\u010d\u0161iu gu\u013eu ry\u017ee a porozkladajte ju postupne na nori riasu. Z\u00e1rove\u0148 dbajte na to, aby pret\u0155\u010daj\u00faci kus ry\u017ee bol na vrchnej strane riasy &#8211; \u010falej od v\u00e1s (2). <\/li>\n\n\n\n<li>A teraz u\u017e podobne ako pri futomaki v pr\u00edpade surovej ryby, potrite k\u00fasok riasy, kde budete rybu d\u00e1va\u0165, trochou wasabi (ak pou\u017e\u00edvate len zeleninu alebo nesurov\u00e9 ingrediencie, wasabi nie je potrebn\u00e9).<\/li>\n\n\n\n<li>N\u00e1pl\u0148 znova ukladajte cca. 1,5 &#8211; 2 cm od spodku riasy (3). <\/li>\n\n\n\n<li>Uramaki je tie\u017e viaczlo\u017ekov\u00e9 tak\u017ee ingrediencie nech\u00e1vam na v\u00e1s &#8211; u n\u00e1s m\u00e1 ve\u013ek\u00fd \u00faspech Lu\u010dina potret\u00e1 na riase, potom konzerva tuniaka a p\u00e1sik uhorky. <\/li>\n\n\n\n<li>\u010eal\u0161\u00ed krok je takmer rovnak\u00fd. Za\u010dnite t\u00fdm, \u017ee naberiete palcami spodok bambusovej podlo\u017eky a ostatn\u00fdmi prstami si prid\u0155\u017eajte n\u00e1pl\u0148 rolky. Postupne pomocou palcov zarolov\u00e1vajte rolku, tentokr\u00e1t v\u0161ak a\u017e do konca, lebo nem\u00e1te \u010do nam\u00e1\u010da\u0165.<\/li>\n\n\n\n<li>Na to, aby bola rolka pekn\u00e1 a netr\u010dala z nej riasa je tam pr\u00e1ve ten k\u00fasok pret\u0155\u010daj\u00facej ry\u017ee, ktor\u00fd rolku pekne uzavrie.<\/li>\n\n\n\n<li>Na konci ju m\u00f4\u017eete e\u0161te jemne postl\u00e1\u010da\u0165, aby mala pekn\u00fd tvar v bambusovej podlo\u017eke.<\/li>\n\n\n\n<li>Pri uramaki m\u00f4\u017eete e\u0161te prida\u0165 krok oba\u013eovania. Nemus\u00edte v\u0161ak. Rolka m\u00f4\u017ee zosta\u0165 teda oby\u010dajn\u00e1 biela, ale taktie\u017e ju m\u00f4\u017eete r\u00f4zne obali\u0165 &#8211; naj\u010dastej\u0161ie sa pou\u017e\u00edvaj\u00fa na obal sezamov\u00e9 semia\u010dka, na jemno nakr\u00e1jan\u00e1 pa\u017e\u00edtka, fritovan\u00e1 cibu\u013eka alebo kavi\u00e1rov\u00e9 guli\u010dky (tobiko alebo masago).<\/li>\n\n\n\n<li>\u010eal\u0161ou vecou, ktor\u00e1 sa \u010dasto pri uramaki rob\u00ed je pokladanie vrchnej ingrediencie &#8211; tuniaka si napr. nakr\u00e1jajte na jemn\u00e9 dlh\u0161ie k\u00fasky (4), postupne ich ved\u013ea seba poukladajte na vrch hotovej uramaki rolky (5, 6). Potom ju p\u00e1r kr\u00e1t pomocou bambusovej podlo\u017eky postl\u00e1\u010dajte, aby tuniak &#8222;prilnul&#8220; (7).<\/li>\n\n\n\n<li>Na konci zost\u00e1va u\u017e len kr\u00e1janie.
