Tieto zemiaky s\u00fa tak franc\u00fazsky franc\u00fazske, \u017ee si vy\u017eadovali zduplovanie n\u00e1zvu :D. To len aby bolo jasn\u00e9, \u017ee sa nejedn\u00e1 o slovensk\u00e9 franc\u00fazske zemiaky, ktor\u00e9 ka\u017ed\u00fd z n\u00e1s pozn\u00e1.<\/p>\n\n\n\n<p>Viackr\u00e1t v minulosti som po\u010dula, \u017ee Franc\u00fazi o \u017eiadnych franc\u00fazkych zemiakoch ani nechyruj\u00fa a tak\u00e9to jedlo sa u nich nepod\u00e1va. Tak mne sta\u010dil jeden v\u00fdlet do Franc\u00fazska s niek\u00fdm, kto sa vyzn\u00e1 a vysvitlo, \u017ee Franc\u00fazi pr\u00e1ve\u017ee ve\u013emi podobn\u00e9 zemiaky maj\u00fa a prv\u00e1 zmienka o nich bola \u017ee vraj u\u017e v knihe z roka 1705, tak\u017ee sakra d\u00e1vno :D. Samotn\u00e9 jedlo inak poch\u00e1dza zo Savojska a je typick\u00fdm alpsk\u00fdm pokrmom.<\/p>\n\n\n\n<p>\u010co ale vlastne tieto \u0161peci\u00e1lne franc\u00fazske zemiaky s\u00fa? Pre jednoduchos\u0165 uvediem re\u00e1lny n\u00e1zov, a to &#8222;Tartiflette&#8220;. Pr\u00edpadne ako sa ujalo u n\u00e1s doma &#8211; &#8222;party flat&#8220; :D. Pod t\u00fdmto n\u00e1zvom v\u0161ak na Googli zemiaky neh\u013eadajte :D. Nevyhod\u00ed v\u00e1m ani franc\u00fazke zemiaky, ani \u017eiadne in\u00e9 :D.<\/p>\n\n\n\n<p>Tartiflette ale teda pozost\u00e1va v prvom rade zo zemiakov. Druh\u00fd d\u00f4le\u017eit\u00fd komponent je syr a doplnkom s\u00fa slanina a cibu\u013ea.<\/p>\n\n\n\n<p>\u0160peci\u00e1lnos\u0165ou tohto receptu je najm\u00e4 syr, ktor\u00fd sa m\u00e1 v origin\u00e1ly pou\u017e\u00edva\u0165 a to je syr Reblochon. Nebojte, ani ja som o \u0148om doned\u00e1vna ni\u010d nepo\u010dula. Reblochon je druh m\u00e4kk\u00e9ho zrej\u00faceho syra &#8211; a.k.a. plesniv\u00fd syr. \u010ci sa d\u00e1 na Slovensku zohna\u0165, v\u00e1m neviem poveda\u0165. Zistila som si v\u0161ak mo\u017enos\u0165 n\u00e1hrady, nako\u013eko sama som tento syr k dispoz\u00edcii nemala a asi ho ani \u010dasto ma\u0165 nebudem. <\/p>\n\n\n\n<p>Za m\u0148a bolo toto jedlo v kone\u010dnom v\u00fdsledku ve\u013ek\u00e1 pecka. Najm\u00e4 z d\u00f4vodu, \u017ee m\u00e1m ve\u013emi rada slovensk\u00e9 franc\u00fazske zemiaky, ale som ich u\u017e jemne objeden\u00e1 a preto mi toto pri\u0161lo ako ve\u013emi dobr\u00e1 a chutn\u00e1 n\u00e1hrada. <\/p>\n\n\n\n<p>Samozrejme, recept som si jemne prisp\u00f4sobila, nako\u013eko som na\u0161la r\u00f4zne mali\u010dkosti v p\u00e1r receptoch, ktor\u00e9 sa mi bu\u010f nezdali alebo pr\u00e1ve\u017ee pozd\u00e1vali. Tento proces trv\u00e1 ve\u013emi dlho (aj 40 min\u00fat). Na konci ju zasypte 2 KL cukru, trochu e\u0161te poduste.<\/li>\n\n\n\n<li>***ak nem\u00e1te \u010das, krok 3 nemus\u00edte absolvova\u0165 a m\u00f4\u017eete rovno cibu\u013eu, slaninu aj cesnak opiec\u0165 5 &#8211; 10 min\u00fat do m\u00e4kka na panvici.<\/li>\n\n\n\n<li>Tr\u00fabu si predhrejte na 220\u00b0C.<\/li>\n\n\n\n<li>Ak idete pod\u013ea m\u0148a, k\u00fdm sa cibu\u013ea karamelizuje, nakr\u00e1jajte si na mal\u00e9 kocky slaninu a pretla\u010dte 3 str\u00fa\u010diky cesnaku.<\/li>\n\n\n\n<li>Slaninu na samostatnej panvici ope\u010dte do m\u00e4kka na ni\u017e\u0161om ohni. Ke\u010f u\u017e je slanina hotov\u00e1, pridajte cesnak a za st\u00e1leho mie\u0161ania ope\u010dte na panvici asi 30 sek.<\/li>\n\n\n\n<li>Dajte slaninu s cesnakom bokom. <\/li>\n\n\n\n<li>Medzit\u00fdm si m\u00f4\u017eete zamie\u0161a\u0165 sladk\u00fa smotanu s 1 KL soli, 0,5 KL \u010dierneho korenia, 0,5 KL \u010dervenej papriky sladkej a 0,5 KL su\u0161en\u00e9ho cesnaku.<\/li>\n\n\n\n<li>M\u00f4\u017eete nakr\u00e1ja\u0165 syr na pl\u00e1tky.<\/li>\n\n\n\n<li>Ke\u010f budete ma\u0165 hotov\u00fa aj cibu\u013eu, zmie\u0161ajte ju so slaninovo-cesnakovou zmesou.<\/li>\n\n\n\n<li>N\u00e1sledne si do ved\u013eaj\u0161ej v\u00e4\u010d\u0161ej misky naukladajte p\u00e1r pl\u00e1tkov zemiakov, z\u013eahka oso\u013ete. <\/li>\n\n\n\n<li>Na to dajte trochu slanina-cibu\u013ea zmesi a zalejte trochou (asi 1 PL) smotanovej zmesi. Znova dajte p\u00e1r zemiakov, oso\u013ete, trochu slanina zmesi a znova trochu smotany. Takto to ve\u013emi opatrne premie\u0161ajte (vi\u010f foto ni\u017e\u0161ie) a m\u00f4\u017eete d\u00e1va\u0165 do jenskej misy.<\/li>\n\n\n\n<li>Ja som na t\u00fato zmes poukladala p\u00e1r pl\u00e1tkov syru.<\/li>\n\n\n\n<li>Znova si vo ved\u013eaj\u0161ej miske zmie\u0161ajte p\u00e1r zemiakov s ostatn\u00fdmi zmesmi a navrstvujte. <\/li>\n\n\n\n<li>****syr medzi vrstvami m\u00f4\u017eete vynecha\u0165, pod\u013ea m\u0148a to v\u0161ak o\u017eivil.<\/li>\n\n\n\n<li>Ke\u010f u\u017e m\u00e1te fin\u00e1lnu vrstvu v jenskej mise, navrch poukladajte syr, tak aby pokryl zhruba cel\u00fd vrch jenskej misy.<\/li>\n\n\n\n<li>Tak\u00e9to ve\u013edielo m\u00f4\u017ee \u00eds\u0165 do tr\u00faby &#8211; pe\u010dte do zlatista &#8211; cca na 200 &#8211; 220\u00b0C asi 20 &#8211; 30 min\u00fat. <\/li>\n<\/ol>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\" style=\"text-decoration:underline;text-transform:uppercase\">Detailnej\u0161\u00ed postup aj s foto:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>V prvom rade uvarte zemiaky. Lebo je s\u00edce pekn\u00e9, \u017ee v recepte je cibu\u013ea, ale tak\u00e1 oby\u010dajn\u00e1 udusen\u00e1 5 min\u00fat ako v\u0161etky recepty hl\u00e1saj\u00fa nie je to prav\u00e9 orechov\u00e9. Kombin\u00e1cia plesniv\u00fd syr a karamelizovan\u00e9 cibu\u013ea je vo franc\u00fazskej kuchyni jasn\u00e1 dvojka a pr\u00e1ve preto som cibuli aj ja venovala \u010dasu a\u017e a\u017e. Bude v\u00e1s to st\u00e1\u0165 ve\u013ea s\u00edl a ke\u010f sa ve\u013emi pon\u00e1h\u013eate alebo sa v\u00e1m ve\u013emi nechce, pokojne m\u00f4\u017eete len udusi\u0165 cibu\u013eu, s p\u00e1r nastr\u00fahan\u00fdmi str\u00fa\u010dikmi cesnaku a slaninou 5 min\u00fat na panvici. <\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ak m\u00e1te \u010das a idete v\u0161ak mojou cestou, ktor\u00e1 si jednozna\u010dne mysl\u00edm, \u017ee je lep\u0161ia, tak si nakr\u00e1jajte cibu\u013eu na polmesia\u010dikov\u00e9 pl\u00e1tky. Do panvice dajte trochu masti (pr\u00edp. oleja) a cibu\u013eu ve\u013emi pomaly na miernom ohni opekajte. Cibu\u013ea sa nem\u00e1 prip\u00e1li\u0165, av\u0161ak mus\u00ed chyti\u0165 kr\u00e1snu hned\u00fa farbu, a to nedosiahnete in\u00e1\u010d ako pomaly a \u010dasom. Pri nej sa sna\u017e\u00edte dosiahnu\u0165, aby bola m\u00e4kk\u00e1, tak\u017ee jej sta\u010d\u00ed aj 5 min\u00fat na panvici na strednom ohni. Po 5 min\u00fatach tam ho\u010fte str\u00fa\u010diky (pretla\u010den\u00e9ho) cesnaku, p\u00e1r sek\u00fand ich za st\u00e1leho mie\u0161ania ope\u010dte, nech sa rozvo\u0148aj\u00fa (cesnak sa r\u00fdchlo pripe\u010die a zhorkne, preto treba st\u00e1le mie\u0161a\u0165 a nie dlho).<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>To \u010do som si e\u0161te ja prisp\u00f4sobila bolo pridanie smotany. A kamo\u0161ka mi vysvet\u013eovala, \u017ee zemiaky so slaninovo-cibu\u013eou zmesou je nejako potrebn\u00e9 premie\u0161a\u0165 a tak vrstvi\u0165. Nevedela som si to \u00faplne predstavi\u0165, lebo som hne\u010f videla ako sa pri mie\u0161an\u00ed zemiaky rozpadn\u00fa, ke\u010f\u017ee s\u00fa u\u017e varen\u00e9 a nakr\u00e1jan\u00e9. Tak som to spravila tak, \u017ee som si dala p\u00e1r kusok zemiakov do separ\u00e1tnej misky na spodok (osolila ich), na to som dala vrstvu cibu\u013eovo-slaninovej zmesi, zaliala som to tro\u0161kou smotany (ktor\u00fa som si predt\u00fdm zamie\u0161ala s trochou koren\u00edn \/\u010dierne korenie, so\u013e, \u010derven\u00e1 paprika a su\u0161en\u00fd cesnak\/). Znova som dala p\u00e1r zemiakov, znova zmes a znova trochu smotany. Takto som to robila asi do pol misky, len aby som tam toho nemala mili\u00f3n, lebo znova by sa to \u0165a\u017eko mie\u0161alo cel\u00e9. Preto som aj tu po ka\u017edej vrstve v jenskej mise dala p\u00e1r pl\u00e1tkov hermad\u00faru. A znova za\u010dala so zemiakovo-cibu\u013eovo-slaninovou vrstvou. <\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pekn\u00fd tvar ako na\u0161e slovensk\u00e9 zemiaky to nikdy \u00faplne ma\u0165 nebude, nako\u013eko jakmile premie\u0161ate tie zemiaky, pekn\u00e9 vrstvenie sa st\u00e1va minulos\u0165ou. Ja som to v\u0161ak v\u017edy po \u010dastiach nalo\u017eila do misy, trochu ucapkala vare\u0161kou, ale nie moc, aby sa zemiaky zbyto\u010dne nepopu\u010dili. Dala som p\u00e1r pl\u00e1tkov toho syra a znova zemiaky. Ako by v\u0161ak povedal m\u00f4j kamar\u00e1t Igor (on to aplikuje v pr\u00e1ci, ja pri varen\u00ed) &#8211; ja rada rob\u00edm veci poriadne :D. A s tou skaramelizovanou cibu\u013ekou a syrom naviac v strede to proste malo perfektn\u00fa chu\u0165, tak\u017ee ak m\u00e1te \u010das, ur\u010dite sa s t\u00fdm trochu vyhrajte. Ak ste \u010dasovo obmedzen\u00fd, ver\u00edm, \u017ee jedlo bude skvel\u00e9 aj bez mojich \u010dasovo n\u00e1ro\u010dn\u00fdch vychyt\u00e1vok.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Koniec receptu som s\u00edce u\u017e nar\u00fdchlo spomenula, ale teda v r\u00e1mci opakovania &#8211; ke\u010f u\u017e m\u00e1te v\u0161etko navrstven\u00e9, na vrch nakr\u00e1jajte syr a pokryte n\u00edm cel\u00fd povrch zemiakov. Potom u\u017e len sta\u010d\u00ed da\u0165 piec\u0165 zemiaky na asi 210 stup\u0148ov celzia. Pokojne chv\u00ed\u013eami pou\u017eite aj ventil\u00e1tor. V podstate ide len o to, aby sa syr roztopil a chytil fajnov\u00fa hned\u00fa farbu. Hlavne aby sa dobre rozt\u00e1pali. Ja osobne naj\u010dastej\u0161ie pou\u017e\u00edvam mix dvoch syrov a to brie od zna\u010dky President a hermad\u00far alebo camembert od Kr\u00e1la s\u00fdr\u00fa. Naposledy som dokonca objavila v Lidli po\u010das franc\u00fazskeho t\u00fd\u017ed\u0148a aj syr nazvan\u00fd Tartiflette. Mus\u00edm sa v\u0161ak prizna\u0165, \u017ee na m\u0148a bol u\u017e moc v\u00fdrazn\u00fd. Robila som jedlo u\u017e aj s naozajstn\u00fdm <a href=\"https:\/\/www.yeme.sk\/petit-reblochon-aop-230g-p56255\">Reblochon<\/a> syrom, av\u0161ak ten som mala donesen\u00fd z Franc\u00fazska.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" style=\"text-transform:uppercase\">Slanina<\/h4>\n\n\n\n<p>V\u00fdber slaniny nech\u00e1m na v\u00e1s, pod\u013ea preferenci\u00ed, \u010di m\u00e1te rad\u0161ej menej alebo viac m\u00e4sov\u00fa. Ja som naposledy spravila kompromis medzi v\u0161etk\u00fdm a zmie\u0161ala a\u017e tri druhy r\u00f4znych slan\u00edn, ktor\u00e9 mi pri\u0161li pod ruku. Mega sa in\u00e1\u010d do jedla hod\u00ed aj tak\u00e1 na\u0161a \u010disto biela slanina, ale viem, \u017ee ve\u013ea \u013eud\u00ed tento druh nemus\u00ed, tak\u017ee to len ako n\u00e1pad.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" style=\"text-transform:uppercase\">By\u0165 \u010di neby\u0165 (vegetari\u00e1nom)?<\/h4>\n\n\n\n<p>Ak by ste chceli, aby bolo jedlo vegetari\u00e1nske, odpor\u00fa\u010dam slaninu nahradi\u0165 hr\u00edbmi. Fit, veg\u00e1nsku alebo bezlakt\u00f3zov\u00fa verziu z toho jedla asi nem\u00e1 zmysel robi\u0165, lebo mysl\u00edm, \u017ee to potom u\u017e strat\u00ed cel\u00e9 svoje \u010daro. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\" style=\"text-transform:uppercase\">Pod\u00e1vanie<\/h4>\n\n\n\n<p>Jedlo sa hod\u00ed najm\u00e4 na studen\u0161ie dni (zima, jese\u0148), kedy potrebujete nas\u00fdti\u0165 nie len \u017eal\u00fadok, ale aj srdie\u010dko :D.
